Hello! The issue with fresh herbs is they have more water in them and can change the consistency of the final product. Depending on how big the piece of herb is they can also rot. (If the fresh pieces are small and/or it's refrigerated then this won't happen.) You can experiment with some small batches and see what happens. Best of luck and thanks for reaching out!
